A high-protein banana bread #recipe that turned out really great for me.
Ingredients:
- 3 ripe bananas
- 150g of oat flour (15% protein, and also high in fiber)
- 90g of whey protein, flavored or unflavored
- 2 eggs
- chocolate chips (no sugar, optional)
- 1 tsp cinnamon powder
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
Instructions:
- In a mixing bowl, combine the dry ingredients (flour, whey, cinnamon, baking powder, baking soda, salt).
- In a separate container, mash the bananas with a fork until pureed and add them to the mixing bowl.
- Crack open the eggs and add them to the mixing bowl.
- Mix everything until just combined, you don't want to go overboard with the mixing.
- Add the (optional) chocolate chips to the batter and try to disperse them evenly.
- Pour the batter to a bread mold.
- Bake at 170 °C for 30-40 min.
Hacks:
- If you don't have oat flour, you can take regular oats and just blend them in a blender or a food processor.
- If your bananas aren't as ripe as you'd like, you can bake them (with the peel on) at 200 °C for about 5 min, to release and caramelize their sugar.
- A simple way to check if the bread is done is to put a toothpick down the middle, if it comes out clean, you're good to go.
Notes:
- Let the bread rest for about 15 min, before cutting into it.
- The bread is tastier cold, when left to cool overnight.
